Welcome to Sunday, the day before Monday which in my house means the day of meal planning, cooking ahead and slowly preparing for the week. This also means grading assignments that I have procrastinated on from the previous week, and then finding other ways to procrastinate on said grading, like posting to my blog.
Each week my husband and I have a little chat about what to have for lunch the next week. Last week we held firm with bacon egg salad, coleslaw, then tuna salad and seaweed. This week something a little more hearty, the last week left us both feeling a little hungry come ‘devour hour’ at our house. Which is the time that we come home from work/school, and begin to ravage our kitchen for food, or perhaps ‘hunting and gathering’ is a nicer term. ‘Devour Hour’ is also right before we start dinner, and go work out so when we are ‘hangry’ (hungry/then angry) this is an opportune time to make bad choices. So this week in an effort to limit the ‘hangry’ feeling as we enter ‘devour hour’ we are going to try some Waldorf Salad, a great combination of fruit, chicken, nuts, and celery that is hearty and delicious.
- 1 cup chopped walnuts
- 1 cup diced celery
- 1 cup fresh grapes
- 2-3 diced cooked chicken breast
- 1/4 cup green onions, diced
- 4 tbsp lemon juice
- 8 tbsp homemade paleo mayo (or if you are feeling entitled, regular mayo is just fine)
- salt and peper to taste.
Mix all the ingredients together, saving the lemon and mayo for last. Mix lemon and mayo in a small bowl, pour over mixed ingredients then mix together. The above ingredients will make about 3-4 good servings, I doubled and made 6 exceptionally good servings.
