Recently someone asked me how I make our spaghetti and meatballs. I honestly can’t believe I remembered, the only thing that helped was that we are having spaghetti and meatballs for dinner after Zandyr’s baseball game. Unfortunately I cannot remember who asked!! So here is my super easy spaghetti squash recipe.
Step 1: Purchase a spaghettis squash and kindly ask the seller to slice it in half. Luckily even at the farmers market in Hawaii someone has a machete!
Step 2: once in the comfort of you own kitchen, or friends kitchen where you will be prepping said squash, scoop out the inside seeds. Exactly like pumpkin seeds; however, you miss out on the gross concept of shoving your hand in the small hole you created, instead you can easily see what you are doing and can scrap the seeds out. Don’t scrap too hard you will take away some of the yummy goodness.
Step 3: Preheat oven to 375 (I usually set the time on my oven for another time, but this is your call)
Step 4:Lightly rub coconut oil on the inside and inside edge of the squash.
Step 5: Place squash inside down in a casserole dish.
Step 6: Bake for 45 minutes, or until a knife inserted into the tough skin on the back goes in easily.
Step 7: Let cool for a minute, or do as i do…use the oven mit to awkwardly hold the very hot squash while using my fork to scoop out the insides. The fork is essential, you want to ‘brush’ out the insides with the fork to form the ‘noodles’.
Step 8: Top it…with spaghetti sauce and meatballs, lobster cabronara, honey and cinnamon. Whatever your heart desires.
