Amazing Potato Gratin – Paleo!

I was a little unsure of this one since there was almond butter and coconut milk and pepper and it just seemed like the taste would be a little rich, which it is. Rich in amazingness!

Ingredients:
2 large or 5 small potatoes, peeled and sliced, for the strict Paleo – Sweet potatoes
1 yellow onion, sliced thin
1/4 cup almond meal – I used ground whole almonds
1 can coconut milk
4 tbsp coconut butter
4 tbsp almond butter (ran out so used peanut butter this time)
2 tbsp raw honey
1 tsp garlic powder
salt and pepper to taste
enough bacon to cover the top 

Instructions
Heat oven to 375
grease 9X13 baking dish – I used organic butter
Use the mandoline and slice up the peeled potatoes and onions, or if you are using a knife, you want your slices to be about 1/8 of an inch thick.
Layer potatoes across the bottom of the pan, then sprinkle onions across and sprinkle some almond meal, and repeat…
until you are all out of potatoes, I used 5 small potatoes
Set pan aside with layered potatoes, onions, and almond flour then prepare sauce.

Sauce
pour coconut milk, coconut butter, almond butter (or peanut butter apparently works well too), honey, garlic powder and salt and pepper in a saucepan and heat on medium heat until everything is melted. Do not cook too long you don’t want it to burn. 

Then pour sauce over the potato layers.

sprinkle some more almond meal on top and then cover with some bacon strips. 

cover pan with aluminum foil and bake for 30 minutes.

This is what it will look like right after you pull the foil off, then turn broil onto high and put back in oven for 3-5 minutes to crisp up that bacon.

This was amazing! Well at least T-Dogg and I thought so, maybe not so much kid friendly.
