Well it has been a little while since I have had time to post, much less actually cook something for my much deserving little clan. Well today is the day, regardless of the extensively large pile of grading to be done, or the planning. After all it is a three day weekend and I am in the mood for yummy food.
What’s on the menu for today?
Homemade Chicken and Dumplings – slow cooked, Paleo style!
This is my first attempt at making Paleo style chicken and dumplings and after much research and recipe building I believe I am going with the following:
5 boneless, skinless chicken breast cut into cubes
3 cups organic chicken broth
lots of carrots
2 sweet potatoes
1/2 white onion
2 garlic cloves
1 tbs thyme
1 tbs sage
1 tbs olive oil.
Coat crock pot with olive oil dice up veggies and chicken then place in crock pot, cover with broth and water if needed to cover veggies and chicken. Sprinkle seasoning then cook on low for 6 hours.
6 large eggs
1/3 cup organic grassfed butter (melted then cooled)
1/4 tsp baking powder
1/2 tsp salt
1/2 cup coconut flour
whisk eggs, butter, salt together
In a different bowl stir in the flour and baking powder then add to egg mixture, stir until smooth, then set mixture aside for 10 minutes.
‘plop’ dumpling mixture on top of stew in crock pot and cook for additional 30 minutes with lid on…
I am going to try this today and then post pictures and details of its success!!
The end product is amazing! I actually baked the dumplings separate for 15 min turned out awesome!
