Walnut Basil Chicken with Spaghetti Squash

I have to hurry up and write this one down so that I don’t forget how amazing it was!


4 skinless boneless chicken breast

1/2 bag of walnuts

2 celery stalks

1/4 large onion

2 tbsp coconut oil

2 tbsp red wine vinegar


2 tbsp white wine cooking sauce

2 tbsp basil chopped

2 tbsp sage

1 tbsp garlic salt

1 tbsp sea salt

1/2 large spaghetti squash


In a large frying pan

add coconut oil on medium to high heat

saute’ onions, celery, and walnuts


add chicken breast on top of the mixture

cover with white wine cooking sauce, and red wine vinegar 

then sprinkle on the seasonings

cook for 10 minutes covered

then flip chicken and cook for another 10 minutes covered

For spaghetti squash I used left over from spaghetti and meatballs and added some butter and sea salt, amazing!

This was soo good, and even Zandyr liked the cooked walnuts.
