Monster Muffins AKA Prosciutto spinach frittatas.

In an effort to tighten up my families eating I have been hunting for family friendly, okay mostly kid friendly lunch ideas that incorporate more veggies less bread. Thanks to NomNom Paleo and her family friendly lunch ideas the boys are excited for what they have named ‘Monster Muffins’. 

The recipe is as follows:


4 tbsp coconut oil

1/2 medium onion, finely diced

3 cloves of garlic, minced

1/2 pound of mushrooms thinly sliced

1/2 pound frozen spinach, thawed and squeezed dry

8 large eggs

1/4 cup coconut milk (the fatty stuff at the top of the can)

2 tbsp coconut flour

1 cup of cherry tomatoes (I used grapes and sliced them)

2 small packages of Prosciutto

Here is how I made them:

preheat oven to 375 degrees

saute the onions, add garlic and mushrooms then set aside to cool

put 8 eggs, coconut flour, coconut milk in large bowl and mix, then add spinach and veggies. 

Use coconut oil to grease the muffin pan, wrap prosciutto around the inside of the muffin pan, then scoop about 1/4 cup of egg mixture into pan. 

Top each muffin with sliced tomatoes, or cherry tomato halves. I made ‘eyes’ with them and then sold the boys on the fact that they were ‘monster muffins’, whatever works!

Bake for 20 minutes.

EAT, put the fridge, enjoy in lunch tomorrow. Portable.
