Coconut curry chicken with cauliflower rice

Still dealing with a stuffy, snotty face. Decided that a little spicy chicken curry might do the trick.

4 chicken breast
1/2 onion
3-4 small sweet peppers
2 tablespoons minced garlic
1/2 tablespoon red pepper flakes
2 tablespoon curry powder
1 tablespoon tumeric
1 can coconut milk
1 cup chicken broth
2 tablespoons coconut oil
1 head cauliflower

Brown the chicken in the coconut oil
Then put to the side
Using the same pan simmer diced onions, diced peppers, and garlic until onions are soft, add seasoning, then chicken broth, coconut milk, and chicken. Simmer covered on low to medium heat for 20 minutes…
While the sauce is cooking chop up cauliflower and run through shredder on food processor, then place in a dry pan with lid, cook on low for 5-10 minutes, covered allowing cauliflower to steam itself.
