Creamy Chicken Casserole: PALEO

I was really in the mood for something creamy and yummy for dinner tonight. Finally feeling better after a day and a half of grumpy tummy time some good ole’ comfort food sounds amazing. Taking inspiration from my yummy garlic mashed ‘potatoes’ aka cauliflower I decided to put together something that could just bake in the oven while the family spends some quality time at cross-fit tonight.

The prep for this took a little bit of time, luckily I stayed home sick today because of fore mentioned grumpy tummy time.

Ingredients:

1 can coconut milk

1/4 cup Ghee

1 tbs garlic powder, 2 minced garlic cloves

1 tbs onion powder or 1/2 chopped onion

4 chicken breast cubed

3 large eggs

1 head of cauliflower chopped

1 bunch of broccoli chopped

Directions. Preheat oven to 375, then melt your ghee in a microwave safe bowl.

Blend coconut milk, ghee, and 3 eggs together, adding the garlic and onions. Then chop up the broccoli and cauliflower. I used the food processor and made them super small, that way maybe the kids won’t realize what they are eating.

Mix up the broccoli and cauliflower into the milk, ghee, and egg combo. Then add cubed chicken, stir and then transfer to a slightly oiled casserole dish.

I just realized this could be really good with some bacon on top…I might have to go add some now.

Bake for 1 hour at 375…

I will post pictures as soon as it is done baking, unless we eat it too fast! Looks amazing, and is going to be a great ole’ comfort food after cross-fit!
