Egg and Bacon “muffins”

Very simple amazing breakfast or snack.
Preheat oven to 350.
Using a muffin pan grease each cup with a drop of coconut oil. Then wrap a slice of bacon inside each muffin cup. Variety of veggies can be used, this morning I used diced tomatoes and green onions. Simply sprinkle your veggies in the bottom of the bacon circle, then carefully crack and egg on top of each muffin.
Bake for 15-20 minutes dependent on how solid you want your eggs. In our house we prefer the whites solid and the yolks soft so I cooked them for just over 20 minutes.
Remove and enjoy, can also be frozen and reheated in microwave for later snack time.
